    Pork shoulder cut up and brined in Frank's Red Hot sauce. Smoked with a mixture of hickory and apple at 225° for about 3 hours.

    Just threw on a small butt, it's about midnight here. Noticed they were on sale today at the grocery store. I sure hope I can put a good bark on it with my electric and smoke generator..... LOL... I'll check on it at 9:30-10:00 or so in the morning....

    Ingle's had Boston Butts on sale recently so I picked up this little ~7 pounder. Got it rubbed down this morning, and it's chilling out in the fridge. I'll be cooking this on the Big Green Egg later tonight for supper on Wednesday night. I haven't done any pulled pork in a couple of months, and my family is ready to jump on this. Absence truly does make the heart grow fonder...

    I have been soaking 2 flats and one point corned beefs overnight in water to draw some brine out. Tonight I'll rub with pastrami seasoning. Back in the fridge til I can smoke them Friday. Then back in fridge and I'll steam them Saturday before we eat

    I smoked the pastramis today with cherry and hickory. I had 3 about 4 lbs each. Stalled around 145. I didn't want to wrap them so I pushed through to 160 then pulled them. Total was about 5 hours at 225. They'll get steamed tomorrow before serving
