    It's just a soaking process that draws flavor and moisture into lean meat. The meat will actually gain weight while brining. Makes a HUGE difference in moisture.

    I should add that's it's VERY important to rinse the meat when it comes out of the brine (before rubbing) because there will be a lot of salt residue on the meat.
