    Damn pork butt stalled out at 169 for an 1.5 hours at 225. So I pulled it after 8 hours of cooking, wrapped it in foil, cranked it up to 275. It's been stuck at 189 now for 30 mins....so damn hungry

    That's why I just put that ass in at night when I go to bed. If it hits target temp before the desired eatin time, you wrap it up tight and bury it in a holding cooler or cambro for a couple hours! Besides, resting it makes it better!!

    Firing it up for an all night smoke. I have 14 pounds of Boston butt on (a 6 and an 8). I have 8 pounds of chicken lollipops that I'll be putting on around 3 tomorrow. All of this is for a block party.

    I grill trip tips quite a bit - never smoked one tho. You should be able to feed 3 - 4 people per. Good luck!

    EDIT: 3-4 big eaters. I usually cook for 4 to 6 people (mostly girls) and we aren't big eaters so we have leftovers. I'd say figure 8 oz per person depending on your group and go from there.

    I would say 10oz per adult and 6oz per child. I prefer to grill tri tip and not smoke it. There's not a lot of fat to render so it can become dry in a hurry.

    Progress. The pork has been going for around 9.5 hours... Currently at 163. The naked fatty went on about 5 minutes before this picture and should be done in time for a late breakfast.

    Not sure but I don't think I every saw a stall. Moved it down to 200 to slow the cook.

    Finally done! Holy shit. 12.5 hours. Went to 202 and probed like butter. Foiled and in the cooler. Pics to come.

    I will say I need to figure out how someway to get the temperature more consistent across the grill. Anyone with a pellet pooper have this problem or a solution?
