    You wrap them and keep them on the smoker for 2 hours.

    Char/finish cooking. If the meat is pulled back a lot when you unwrap it, you won't have to cook them long.

    I think ribs may be better for me. I want to do some suspension work and it's less baby sitting. Brisket, I will check every hour on the hour to make sure it's good.

    And it looks like my suspension kit just came in. @SMKYTXN will thank me on those long road trips now.

    If only the glass company was right next door...lol this place was 30 mind from me. Plus it doesn't fit in my bed. The guy looked as the me and asked jokingly. Where are you going to out this? On the roof? Lol I said yes! And strapped it to the bed rack.

    I just finished off the butt I cooked weekend before last. Might cook some ribs this weekend (now that I'm thinking about them) but I think it's about time for some ribeye now. I also have been hankering for my own version of the Philly Cheesesteak. Which I can cook the same time as the ribeyes :hungry:

    If I only had an alignment rack :pout: My truck should be paid off by next Feb. Then the suspension happens :yay:

    This would be a great time to do ribs. When I see them cheap at Krogers/Foodtown I buy them, and chuck them in the freezer. Time to cook some.
