You wrap them and keep them on the smoker for 2 hours.

Char/finish cooking. If the meat is pulled back a lot when you unwrap it, you won't have to cook them long.

I'm probably doing ribs this weekend.

 

I think ribs may be better for me. I want to do some suspension work and it's less baby sitting. Brisket, I will check every hour on the hour to make sure it's good.

And it looks like my suspension kit just came in. @SMKYTXN will thank me on those long road trips now.

 

I really hate the front install because I'll have to get an alignment. But it's the faster of the two installs.

 

If only the glass company was right next door...lol this place was 30 mind from me. Plus it doesn't fit in my bed. The guy looked as the me and asked jokingly. Where are you going to out this? On the roof? Lol I said yes! And strapped it to the bed rack.

 

I just finished off the butt I cooked weekend before last. Might cook some ribs this weekend (now that I'm thinking about them) but I think it's about time for some ribeye now. I also have been hankering for my own version of the Philly Cheesesteak. Which I can cook the same time as the ribeyes

If I can talk someone into building a garage and setting THIS up in it I'd give 5 yrs of weekly alignments lol

30 minute drive to get a window cut doesn't sound bad at all. Fuck, its 15 minutes just to get groceries where I live lol.

This would be a great time to do ribs. When I see them cheap at Krogers/Foodtown I buy them, and chuck them in the freezer. Time to cook some.

 

Meh. I just go to Firestone and pay 199 for lifetime alignment.
