    I do the 3-2-1 method all the time for ribs. Never a disappointment. Even worked when it started pouring down like crazy last weekend.

    Here's a random question...

    Can you "par smoke" ribs?? By that I mean....

    If you were trying to cook a lot of ribs, could you cook them to a point to cut down the cook time, but still finish them off the next day to have that fresh off the grill taste??

    Food safety tells me no...but I've never looked into or tried it. :notsure:

    That's a bigun lol

    If I were u I would research reverse flow setups and tuning plates

    Also gonna be tough to make a hybrid smoker/ grill unless u just set the whole thing up as a big grill and utilize indirect heat methods.......might work lol

    Most restaurants I've worked at fully cook em ahead of time, then sauce and heat to order.
    Maybe cool them off in freezer?

    Ribs and brisket are 1.80lb this week. I'd love to do a brisket, but I don't feel like babysitting. Especially when I want to do some suspension work on the truck. Guess it may be ribs for me.

    that's a big butt. i actually prefer smoking ones about half that size. it cuts down on cook time significantly. you can get 2 5lb butts to 195F faster than 1 10lb one. plus you get more bark.

    Agreed. I usually do the same. In this case, my buddy who is throwing the party went with me to the store to pay for the product and he picked out the big one. It was also later in the day and there were only bigger ones available and my motivation was to get back to drinking beers instead of asking the butcher to cut me up some smaller ones.
