    Its so hot out right now be sure to keep a close eye on your temps. I did 3.5 lbs of jerky on Sunday which normally takes about 4.5-5 hours depending on the cut, it was done in 3 on the smoke setting on my traeger.

    I was holding about 40* above normal temps with my grill in the shade. it was pretty crazy.

    Still the best batch of jerky I've done to date tho, even with the quicker cooking time

    I sprinkled a little bit of cinnamon before putting them on.... DAMN!!!! They are good. If only I had some vanilla bean ice cream to scoop on them when they came off, THAT would have been perfect.

    I have grilled peaches several times, this was the first time smoking them. Do it! You won't be sorry! (unless your allergic to peaches, well then, your just weird).

    Damn weather... up here in Seattle area, it rained like a sumbitch off and on last Sunday, screwed up my smoke bad. Had to dance around with temps and times all day. Turned out ok, but not as good as if the weather would just friggin cooperate. I need to build a shelter designed for smoking.

    Buy one of those 50 dollar walmart beach canopies. Or look on craigslist for one. At 10 ft tall that should do the trick.

    it was 120* at my house on Sunday, didn't really wreak havoc with the cooking, just cooked hotter than normal. I did try cooking an egg in the street haha

    When it downpours like it did on Sunday and hits the smoker, the temps drop like a rock. Just when I would get the temp stable again, here comes another thunder shitstorm. It sukked bad.

    Smoking a butt 6# butt now. Mustard brown sugar cinamon cayenne onion cumin a little apple vinegar black pepper and a couple small thing. Hope it turns out good. This is my first but by myself.

    225º for about 30 mins open face up and then 10-15 mins open face down on the grills. HAVE ICE CREAM READY!

    Grilled peaches are the shit. A good tip is to get them were they are just about over ripe. Wack them in half and hit them pretty hard with turbal or brown sugar and let them rest for about an hour. Then slam them on the grill cut side up for about 15min or so indirect @350. Then face down direct for another 5-7min. Full of win
