    Salt, pepper, garlic.

    Or any BBQ run you have.

    In a pinch, Montreal steak seasoning works well in moderation because it is salty.


    I cook to 135 to 140, pull, rest, slice across the grain!

    Mayo, Lea&Perrians, white vinegar, lemon juice and a ton of black pepper. I don't know amounts. I just add, taste and adjust. If it becomes thin (I like mine thick, so it'll sit on top of the chicken not run off) I'll add a tsp of corn starch, just to "tighten" it back up.

    This. Melt some butter with minced garlic. Rub it under the skin. Tie the legs up to keep them from burning. Rub butter or spray with apple juice once or twice during cooking. Nice crispy skin and very juicy meat.

    I told you!

    Rub with SPG, or light coat of Montreal steak seasoning, or your favorite BBQ rub.


    Cook to 135-140 for med rare. Pull, rest, and slice against the grain.


    If you want some smoke....use oak. Hickory is good, just stronger flavor.

    I tried cutting my buck board bacon but it was difficult getting it sliced thin enough. I did a few test pieces and it was more like Canadian bacon. I decided to freeze it and see if that made it easier. Bingo! We have bacon!

    Tri tip is good on the smoker. If you have a cast iron pan sear it once it's done smoking.

    MT stuff, RTT stuff, the usual.
    Tri tip is one of my go to beefs. Grew up cooking it on a Weber. Cooks decently fast & is tasty.

    I cook up a thinner BBQ sauce and dip the left overs in it and use it for all types of sandwiches.
