i'm a pretty big fan of the smoker and rotate between pork shoulder, brisket, some fish and of course full chickens. I usually dry rub the heck out of them (brining the pork and fish) and keep em on as long as low as i can. i'll make a sauce, but i don't use it myself.

i use a little barrel type smoker, but one time needed some extra space, so i built one made of cinder blocks off the the side of my fire pit (wife HATED the way it looked, haha). i always go with an apple juice or old beer bath over the heat, under the racks of meat. x

Sorry forgot the "rubbed" shots, my hands were greasy and caked in rub. Nothing special, equal amounts of garlic salt, red, white and black pepper. image.jpg

Everything seems fine here, I guess I'll go to bed and check on this somewhere between 10:00 and 11:00am.

Well I can't sleep, the storms were pretty severe. But didn't last long. So, I was forced to check my temps, under a vine covered pergola. I was shocked to see that they remained the same...image.jpg

Are you a home owner? There's plenty to do at my house to do without having to check my pellet pooper. BBQ is my prize at the end of the day.

I've used a primo for years. It's really the only way to go in my opinion. You can run a ceramic from 150 to 700 no problem. Weather doesn't effect them and they are super efficient when burning fuel.

Local Foodland chain. They are a threat to run them for .99cents at almost any holiday. That's pretty much standard rate.
