    What's strange is. They will have packers (which I usually avoid) or fresh for the same price.

    I looked those up, they do look pretty badass. The biggest one is only like 1400 bucks, so they don't break the bank. Is that the one you have, with all the gizmos that go inside? And what fuel do you use? Also, looks like you just leave in the 2 plates above the coals, except when you need a sear?

    Packers are packaged in a huge facility (packing house) usually in a nitrite/nitrate solution, sealed in a heavy plastic "name brand" wrapper. Fresh is like what I posted earlier, where the local butcher has cut and packaged it. Sometimes, they (local butcher) will open packers and wrap and price as fresh. But you usually can tell by the amount of liquid in the packaging.

    This is what a packer looks like. A good rule of thumb, a packer will almost never have a tray.

    You can make good product with a packer. I just rinse them well and pat dry before applying my rub. But I do prefer fresh cut.
    I'd try a different store to find fresh ones.

    It was great. So good actually that my gf got mad when she realized i put what we didn't eat last night in the freezer haha. She doesn't do leftovers and shes headed this way as we speak to steal some for supper. Where do you get your meat?

    Primo bangs you on everything. Defuser plates, firebox splitter,2 extended racks,ash tool,pizza stone, and whatever table or cradle that you want. You are around $2100. They are an awsome product. You can only run lump in them. Once it's up to temp,it's super efficient. Ive ran them 40hrs on one full box of lump. They have four different sizes. I always recommend the XL. More grate space the better.

    Doshers is actually where i'm going to be heading to today. our Captain says that's where hes been getting his stuff lately and they have great prices. he also said yes, its pretty ghetto haha. they have some WEIRD stuff in there, but cheap good meat too.

    You keep the two diffuser plates in when smoking? Do you even use the divider?
