    @AugustaTaco, You CAN smoke a steak on your smoker AND your cast iron pan, AND avoid being tossed out by @greeneggsnspam! Smoke it at 225f/230f until IT reaches 125f. Put it in a preheated cast iron pan to sear and BAM!, awesome steak! Just did this tonight.

    same idea as the SM tri tip... Low and slow until IT is 10 less than you want, then sear either over hot coals or hot cast iron. Either way, Bueno!

    They were, same concept though lol. I just smoked them for like 20 minutes indirect and then seared them on the coals for a couple minutes. Ended up pretty damn delicious.

    Picked up a butt last night. Just got the smoker going and have quite a few people coming over for dinner tonight. Just doing a simple rub and regular sprays with a mop sauce.

    I don't tend to thing as much as you guys :laugh:. I'll be going to the gym, then shooting the bow, and then coming back to see how the temp is holding.

    My dad is the same. He has it set up so the internal and grill temp is sent through wifi to his phone. We could be in town shopping at Walmart and he will keep an eye on it. I have found that the more I leave it alone, the better it tastes. When home I'll check the temp every now and then just to make sure it doesn't drop for some reason.

    Couple hours in. Opened it up for a vinegar bath. The my house smells like bbq and it's amazing.
