    Those are pre cut on the fatty side before placing the meat on the smoker. First time I am trying it out. My father did it at the competition we entered. Apparently it makes for better bark.

    I tried about 3 of them. They just didn't do it for me. Then I started putting together rubs I found online, and tweaking them to my tastes (more asshole burning heat, plz)

    This reminds me. I really need to try this local meat market nearby where I live. But every time I go in, they're packed. I hear you have to be there about an hour before they open.

    We have a good butcher in town I get things like steak from. Not super picky about my pork most of the time and generally get it when it goes on sale at Safeway. BOGO free deals are hard to pass up :).

    This... sadly the only "real" butcher shop in my town has closed. It was a bit pricey, but such good product.
