    Smoking two briskets this weekend using the WSM. Time to let them thaw in the fridge. Going to also fire up the MES and smoke some drumsticks. Babys 1st bday.

    One of my friends had talked about building a table like the first one you have. Instead he ended up doing one with 2 ice chests in it (lids lift off but it all blends into the top of the table) and then a small propane fueled fire pit type thing in between. He calls it his fire and ice table lol.

    If anyone has an amazen pellet smoke tube or tray that they have struggled to keep lit or produce smoke from. I came across these "chips"... really it's coarse sawdust that works really really well. I'm doing a spatchcocked chicken now and it's been perfect smoke for about 2.5 hours now and going strong. I highly recommend it

    How does it compare to the AMAZN dust? Looks like price is about the same. I'm due an order anytime now.

    For me it's better than the dust. It stays lit better and has a perfect amount of smoke. I had a hard time keeping the amazn stuff lit and burning. I will say that it doesn't last as long. In my tray each row lasted about 2 hours with this stuff. But it lit and stayed lit much better. The pieces of dust are bigger so it's lighter and less compact so better airflow, but the result of that is a faster burn.but I'll take it.

    Looks good. I looked at that dust, I didn't see any hickory offered. To me that's a deal breaker in itself.

    I use mostly apple for everything. I do have hickory chunks though sometimes I'll throw in.

    I used to do it on a gas grill with the pellet tube. I followed Alton Browns recipe and it never failed me!!!

    I don't cook pork, chicken or turkey below 250. At those Temps you never even have to worry about it.
