What sucks about the 3.5 is that your MPG goes to hell when you stomp on it. Larger displacement means you have to tax your motor less in daily driving. It's why V8's get better towing MPG

Wheel/tire weight can have a surprising impact in acceleration, which is why it is important to try and keep added rotation weight to a minimum. Hopefully your new tires are C-load and you are not paying the extra performance penalty for overly heavy E-loads.

Think of drive as economy mode. It shifts early to keep rpms low. Ect power button lets the engibe rev higher in each gear, which is where it makes its power. If you move the shifter over to sport it will limit the transmission to 4th gear by default, not lettibg the tranny shift into 5th or 6th unless you push forward on the shifter to move into those gears yourself.

Still, 0-60 in 6.8 sec is surprising. My last two cars were turbo fours with manual transmissions. The first one was a 2.0t gti that had a ton of low end torque and then flattened out. Never had to downshift in that car. The second one was a fiat abarth 1.4l turbo which which was a much higher revving motor. It took me a while to get used to having no low end torque. I was used to shifting into 2nd at like 2k rpm. But the fiat turbo didnt spool until around 2500 and would pull like a bat out of hell until redline peaking at around 24lb of boost stock. Still both cars reached 0-60 around 6.8-6.9 seconds.

I normally drive mine with ECT engaged, unless I'm in stop and go traffic. Having ECT engaged in traffic causes some jerking when slowing down and speeding up again since it stays in the same gear. But under normal driving conditions, ECT makes a difference. I know it changes shift points in the transmission, but I feel like it also helps with the throttle response.

Try Sport mode while in traffic. The truck accelerates a bit better. ECT is better suited for if you are towing or if you are climbing mountain roads.

The accelerator pedal moves for a reason, same reason the tach goes to 6k. Let it eat.
