One of them is stuck. Like REALLY stuck. I even tapped lightly with a hammer and it won't budge.

Winter is coming, kinda need this!

If they don't pop out, do I have to start taking the console apart? Is there a guide for that anywhere?

Sam, are your heated seats not working? Maybe check the fuse prior to trying to pop these out?

Turns out a little plastic piece inside the switch melted, then hardened (over the contacts), thats why the switch would not move in either direction

I would have someone look at the wiring on those. If the plastic melted, chances are it was heated by a short or two much power. Maybe make sure it uses a relay vs wiring directly in line with the 12v. switches just don't melt from use.

I just googled "seat heater switch melted" and it looks like an issue common with VW and Audi owners....

Right, but seat heaters are factory to Audi and VW using OEM switches (Audi switches and electronics have been an issue for years). The Tacoma doesn't come with seat heaters from the factory, they are provided by outside clients as an additional package. I would just double check the wiring to make sure it was done correctly and not the 'easy' way.

Look like the switches that come with katzkin heat kits.

That was my first thought. Though most eBay and generic kits use similar because they're small and can be installed in more places.

notice the placement of the switches...... right next to the cup holder did you maybe spill something on them? This could short them out.
