    I used to let stuff sit out for awhile before placing in the smoker. But now, as quickly as I can, from the fridge to the smoker.

    I don't even let my steaks sit out anymore. They get the rub, into the fridge to sit for a while, once the smoker is up and good to go they go on to smoke for 20 to 30 mins straight out of the fridge, then the temp is brought up and I finish cooking them. Darn good steaks, nice smokiness to them but not overpowering by any means.

    In reading a bunch of the smoking forums I read that if the meat is cold it helps with the smoke adhering to the meat so started trying it out and I'll be darned if those people didn't have something there. Now if only Alton Brown would tell us why :)

    I love it. If you get your temps within range off the bat it will keep them there. I usually keep an eye on it till the temp stays steady. After that it will run for hours without an issue.

    Made some chops tonight. Put em' on the smoker for about an hour till they hit 130. Then heated up the gas grill to sear them. Pulled them at 150 and wrapped.

    The baby potatoes went on the smoker for about an hour, then chopped and seared in butter.

    Man, that was good.

    Looks good. I cut some chops out of a loin that are 1-1 1/4" thick for the smoker. Can't wait to try them.
