    Gristle aka tendons and cartilage turns into gelatin with the right amount of heat with the right amount of time. Usually that's between 150°-180° F.

    Connective tissues like silver skin won't melt down though even with heat and time and that should be removed. If it's not removed it'll be tough to eat. Cheaper cuts are generally full of silver skin type of connective tissue that makes it difficult to remove and thus cheap. It's kinda funny but the more expensive pre-packaged stuff is usually because someone has spent the labor to cut down the piece to make it nice and easy to eat once cooked.

    This is why I generally like to buy sub-primal cuts and break them down to what I want.
