Take it easy on the OP. He said he has one kid, his fiance has 2. Maybe she has a bigger vehicle and he was just asking in case they wanted to take a camping trip in the truck.
My guess is OP hasn't gone to look at the 3rd Gen AC to see for himself. If he has seen the AC for himself and is still asking this question, then we can say Foolish.

With all the safety regulations and lawsuits, no one will touch a seat modification. Since you have a 1st gen, I'm guessing a new truck isn't in the budget. We all have budgets, but I think an access cab would be a terrible call. If you can't stand the cost of a new sr5 long bed, it looks like a used dodge double cab, or extended cab ford or Chevrolet may be your best bet. A crew cab half ton with the flip up center console is a great family wagon. You can seat six reasonably comfortably. Used Frontiers are more affordable, but I don't think you can get a long bed in them. If you can, that may be a decent option.

You just don't joke about stuffing three people in two seats, its just not safe. And the fact that he'd even consider asking the internet deserves to be questioned. Not rudely, just abruptly and firmly. Like @ACLBFTMFW would

Most people take 3 kids and see how they fit on the dealer lot. There are better family vehicles than midsize trucks with no rear seating.. like midsize trucks with rear seating (DC).

Just one example.. don't shoot the messenger.

On a side note, I've always wanted a Miata. You think I could fit a car seat in the backseat or should I be looking at something with a backseat?

You can put the kid in the Trunk of the Miata and you won't have to worry about the kid getting sunburn.

Future conversation with his fiance. "Hey honey, yeah I know I bought a new truck that is way too small for a family of 5, yeah yeah I know we dropped a a good amount of money on it and all of us can't fit but .... CLICK DIAL TONE".

Instead of treating the guy with kid gloves OP how about we tell him like it is and that AC cabs sucks with kids.

The OP said that he didn't want to spend more then $30000. The Ridgelines are expensive.

Based on him coming out of a Gen 1 access cab, I'm thinking the budget is more like under $20K possibly. Makes sense if he's trying to figure out a way to cram 5 people in an access cab. Don't laugh, there are plenty of vehicles down here in Texas that have 5-6 people in a 4 seat vehicle.

NO way will it be worth it to go this route. Ya you could probably fit 3 kidos back there , but they will be cramped. That 5 year old will quickly run out of room. I just replaced my AC for a DC to fit my almost 13 and 11 year old kids. We have been discussing getting a bigger truck for about the last 3 years.
