    What are your issue with the 400? I have a Viair 300P and was thinking of hard- mounting it and adding a tank. Or selling it and getting the 400 or 450 and adding a tank. Or the CKMTA12. The Viair systems would be $200 cheaper...

    Portable can be EAF. EAF comes in all forms based on what you need. In my case, it's 2,500 lbs of shit :anonymous:

    Use indirect heat. With propane I'd soak the chips first so you get some long lasting smoke. Never tried on a gas grill, let us know how it turns out.

    Any idea how long I should smoke before transferring to the oven/crock? Looking for smoke flavor.

    Also should I brown the shoulder before I put it in the smoker or after?

    I'd only let it smoke for an hour or so. If you're going to cook it after, I'd keep the temp relatively low on the grill. Just let it take some of the smoke and not cook much. I'd keep it moist as well on the outside with some water or apple cider vinegar. But again, I only use charcoal.

    For the BBQ? I'd say 200 or less, or that sucker will cook with a quickness. Light one side, put the chips on that side in a foil pan or smoker box if you have one, and put the meat on the other side.

    It is slow; always the last guy done airing up. Could live with that if it didn't also run hot enough to require the use of gloves to disconnect the air hose from the compressor after use. Or melt/burst a total of 3 hoses while in use. Not sure whether it is just mine. But I have cast envious glances at enough CKMA12s to make me want the in-a-box version. The CKMTP12 would make all my dreams come true but can't justify spending $700 on the problem.

    I know it's super nonEAF. But for around a hundred bucks. Plus it serves other purposes... I have one almost identical, but black and decker brand. Takes up slightly more space than that box, but not by much...
