    I have my local dude on speed dial for tamales. $2 a pop. Text him with the order in the morning, meet at the bar on the way home to pick em up. I usually buy 10 pork and 10 combo, drop him a 50 note and we call it good!

    I just setup my meat probe in front of my smoker so I can check the smoker remotely.

    Not sure if genius or depressing.

    But when I start up, I baby it for an hour or two. Sounds like a perfect time for a run (if I'm not still drunk)

    The tamale festival in Somerton, Arizona is tomorrow. Just south of Yuma and just north of the Mexican border. Supposed to be over 40 vendors selling tamales...and I have to miss it.

    The last time I needed my wife to watch the smoker was on Thanksgiving a few years ago. I need to run to Publix to get something so I figured it was fine for a 20 minute trip. At the time, I had a vertical brinkmann smoker that had the 2 doors on the front and a tiny water pan. When I got back home, black smoke was billowing around the house. The water pan had run dry and ignored from all the turkey drippings. I still to this day tell her if she sees too much smoke when I'm not actively watching the smoker that she needs to get me. I also switched to using disposable foil cake pans under everything I cook. I keeps the drippings from getting on the water pan and prevents them from igniting even if the water pan is dry.
