    Thanks. Temp has been great despite the wind picking up. Was able to hold for around 225° so I decided to nap.

    Now I want some beer. Lol

    I plan on building a baffle for winter smokes eventually. It's really hard to keep thin metal smokers and grills hot enough, plus the wind causes the temps to fluctuate.

    Here's a good tamale recipe, made them a few times. Assembling tamales is a very zen experience, you just get into a groove and you're lost in some other dimension. Takes time though.

    Season yo meat. Vacuum seal it in a bag. Put it in 100 degree water for about 45-60 minutes. (Internal temp should be 100°by then). Sear it on a really hot grill. Depending on temp of grill, 3-4 minutess a side should get a perfect med-rare

    Ya I don't think that method would be much use on a roast. I think you have the right idea. Bring it up to close to finished temp and sear at the end :thumbsup:

    IMG_5407.jpg I used to use something similar to this. Mine had 3/8 ply and hinges, so I could fold it flat to store it. I believe that wind hurts more than the cold temps.

    Kroger had the shoulders for 88¢. I'm not sure why there's a 20¢ difference in cost between briskets for us vs you at an heb. Any others nearby you can try to see if you can get a lower price?

    Man you'll get more opinions on that than you can count. Look for used ones on Craigslist. What is inexpensive to you? You can buy a "pill" smoker for $50.00 or so. They produce great product, but can be finicky about consistent temps and need to be tended quite often.
