Trim the fat from around the top of the heart and remove the sinews. Cut the heart into 4 pieces and put it in a heavy stewing kettle with the meaty bones and liver. Add 3 quarts of water, cover and simmer gently for 3 hours until the meat falls from the bones.

Strain the broth into a clean pot. Discard the bones and put the meat through a coarse grinder. Grind the heart and liver as fine as possible and combine the 2 meat mixtures.

Bring the broth to a simmer. Combine the cornmeal and the seasonings and gradually add to the boiling broth, stirring constantly. Reduce heat to medium and add the meat mixture. Stir until everything is well mixed. Cook slowly for 30 minutes, stirring almost constantly so it does not stick to the bottom, as it will be quite thick.

After 30 minutes it is ready to pour. Rinse 9 small breadpans with cold water or grease them and pour the scrapple to the top of the pans. Set the pans to cool and when cool refrigerate until the next day.

When ready to eat, unmold the scrapple onto a cutting board and cut into 1/4-inch thick slices. Melt fat in a skillet and fry the slices until brown and crusty on both sides. Serve immediately with or without maple syrup.

The spices used can make it or break it. Most will never give it out. Store bought is usually just pepper and salt, ugh.

Cook mine in bacon grease, don't flip it until the moisture is pretty gone and it helps make a crispy crust. Then flip and do the same, but don't burn it!!

I like maple syrup on mine. With a couple of eggs over easy on top, good and runny.

In the South more cornmeal is added and is known as liver mush.

 

never had a seperation. just got back to work in september from reconstructive surgery and it's torn again. the clicking is probably your bicep tendon where it goes through your labrum mine does it also. not much labrum left good luck if it keeps bothering you get an mri

I had my shoulder redone in October I just started PT in December and won't be going back to work till Mid March. I am right handed and it was my right shoulder and do to the nature of my job I have to have it fully functional. YMMV

Overall the 6.5 and quarter bore are my favorites. The terminal performance is way beyond any ballistic table.

Had a ok morning at work. Made some time. Afternoon was slow. I was tired so just gave stuff to the younger guys.
Power washed the truck from the 7 inch storm.
Then came home and ate then tackled the drive, walkway around the house, roof, gen area, bulkhead.
Suppose to rain tomorrow then flash freeze so the space I have will be all i have till spring.
Thinking of a new project for summer. actually a spring project to use in the summer.
