Well you cook off the ham and bacon first at 350 ish while you are dice the potatoes and mushrooms up small. Use some bacon grease in a flat pan to cook off the potatoes and mushrooms with to taste onion powder, garlic powder, onion salt, garlic salt, black pepper , white pepper, some cayenne powder. Let them cook for about 20 min then lower temp to 250 ish add in either 2 small boxes of egg beaters one reg one southwest or 2 reg egg beaters and the picante sauce get them cooking till the eggs are starting to stiffen dump in the ham and the bacon mix . Let it sit for a few minutes then the cheese mix it all in put the lid on for about 5 min turn off pan let it set about 5 more min and then put in containers. I have tried pre making the burritos they get soggy after a few days in the fridge even if the mix is ice cold before wrapping them up. I have used chorizo instead of ham or with ham lol depends on when my next cholesterol test is lol
