Lots, about to sell it and come back to Tacoma though.
Can you fit 2 adults and a car seat in the backseat of a DC?
I'm talking for short rides here and there when my folks are in town...I know it wouldn't be good for a long trip.

Yes, but it will be tight. Car seat takes up a complete seat. I can fit 2 car seats and a small adult in the middle. Really depends on the size of your folks. Average size will be fine for short trips.

5'11 and 5'10 males 170 and 180 lbs in front seat. 5'5 females at about 140 lbs or less (I'm not going to ask) in the back with the 3 yr old in a booster seat with a back. Hoping he can drop to just a booster when he is 4.

    Chivalry or self-preservation?

I don't have a car seat but would think those ladies would be fine.

    Worst case, go for this:

Depends on the type of car seat and where you put it.
If you can get away with putting it in the middle the Answer is yes. If you're trying to put it in one of the seats and have an adult rise in the middle, not very comfortable

Look at Diono child seats. They aren't cheap, but they are more narrow then the standard child seat. They can face forward or rearward and even fold up for travel and can be used on an airplane.

In their advertisements, the show three in the backseat of something similar in size to a Tacoma.

I have one, forward facing in the center with room for an adult on each side. When using it in the center, the seatbelt must be used, but mine is very secure.
