Awesome. I'll do some shopping next week and grab one. Temps for slow cooking? Times? I finally looked through my Dutch manual and lo and behold there's an actual list of coal placement and amount for temps in the dutch. Brain explosion.

I went with throwing up cookie dough. But mmmmmm cookie dough.

 

I was between 225-250 for a little over 2 hours. It was rushed a little and finished in the oven since my smoker dropped temp and we couldn't get it back up.

I'd say 2 hours with a 30 minute rest would have been perfect.

 

Bueno. I need to break in the baby dutch, so I'll throw in some red potatoes next to it and let those marinate in some juice while they cook. Fuck, now I'm hungry.

It's what I had for lunch. Fattening up for the winter.

 

I've got some marinated Tenderloins and some sort of side dish for dinner. Side dish is TBD
