    Fan sounds like it's blowing consistently. I thought about the thermo....damn. She's not even 2 years old!! But I have used the heck outta her!! :D

    May need to order a new thermo.

    I had my food probe on my gmg db go last week. I had a back up waiting because it was never close to my chef alarm. Now they are within a degree. hopefully that's the answer! :fingerscrossed:

    IMG_6005.jpg Since we've been talking reverse sears and sous vide, this t-bone came out great tonight. 40 mins at 275 in the oven then a minute on each side in a cast iron skillet on the stovetop. Medium rare edge to edge.

    I bought the cut up loin.

    Costco is an hour away. Sams is 30 minutes away. I drove 10.5 hours from FL to TN yesterday. Publix wins at a 10 minute drive. I didn't go there to get this specifically, but snagged it because it was on sale.

    8 half inch thick chops, 8 thin chops, 8 country ribs, and 1 loin roast.

    I understand that feeling. We only have a Walmart locally. I try to make a costco run at least once a month just for meat!

    I normally get meat from Publix or the local butcher shop in Murfreesboro, Tagz 5 Star Meats. Their meats are good but a bit more expensive than a grocery store. It's usually much higher quality and you get to support a local business.

    We have a Costco here that finally went in about a year ago. I have thought of joining it many others have. Used to do Sam's club years ago mainly for meat but seemed like the meat grade went downhill.

    Local grocery store here is out of Iowa and that corn feed beef, pork and even chicken is awesome. They even sell Prime cuts of beef, even the meat lockers and local butcher shops here only sell Choice at best. You do pay for it but I don't mind. Is the general consensus that Costco is good for pretty much all meats, or really good deals on pork and chicken? Have heard their Kirkland (?) branded stuff is pretty decent including wines at a good price.

    Did my first smoke on the new WSM using the CyberQ and Viper Pit Fan Automatic Temperature Controller. Started late yesterday around 11 AM and knew it was going to be a long night, and it was.

    Unit and fan is not waterproof, most seem to put the controller in a plastic bag and cover the fan with an aluminum foil tent. I wanted something a bit better so modified a plastic storage box which works great so far.

    Interface is pretty basic, web page and with DDNS available anyplace with smart phone etc. to monitor and change settings but I normally baby sit a smoker. Don't like leaving a lit fire at home while I leave. Most 3rd party apps are geared for Apple iOS. Found one for Android at 1.99 but is pretty basic. Can only chart pit temp and doesn't do the 3 food probes like the Apple apps do. But overall pleased with the built in interface. Temps were pretty consistent within a few degrees.

    Temps ranged between the teens (above) and high 20's and variable winds. Got a silicone jacket for it which slips on and off pretty easily and seems to help in the wind and cold. At least compared to smoking on the kettle and other smokers I've had.

    But what really matters is the final outcome. Was strange at first not going out and dorking around with the vents, but is why I got it LOL. Very pleased overall and will get the adapter for the kettle to do rotisserie turkeys and chickens.

    Just a few minor things.
    9lb pork butt going right now. Been on for just over nine hours at an average temp of around 270. Current internal temp is 170. First time trying the eggs. Left them on for two hours and they were FANTASTIC!!!! Happy new year folks. Cheers.:cheers:
