    I was the Mfg Engineer for a company that built vehicle speed sensors about 20 years ago. Needed a screen name and that's what I've used since then. I'm now an Engineer for a defense company that makes guidance "stuff" for 'unmanned aircraft'. Most of the "stuff" I work on now is for one way flights...

    Smoked almonds and a few cashews thrown in here. Almonds are low carb, cashews not so much that is why they taste so good I figure. Love pears either fresh or slightly dehydrated for the few times I do have desert.

    Question for those that have a food vacuum sealer. I'm looking at getting one and it seems they are all across the board in price and reliability. I would like reliability at a decent price but willing to pay for what works, within reason. For left overs in the kitchen, smoking, and on wild game limited to birds like pheasants and grouse. Also would like to try Sous-vide. Any experience with these things? Tired of freezer burn on birds that I put away only a couple of months ago.

    I have an original food saver and use it at least once a month on meat shopping days. The bags can get kind of pricey so watch for deals on multi roll packs do not buy the premade ones you get less bags for more money. I want to trade up to the newer model so it will take up less space on the counter mine lays down the new one stands up. As for storing meat etc it works great I can get a year on most meats no freezer burn of off taste etc. It also works great if your speed marinating or pre-marinating and then freezing all in one. I have a few of the containers they are good for stuff you do not use often unless you are going to leave it on the counter. I can tell you doing lunch meat for a trip is great I do it every year bring all the lunch meat for two weeks when I go home to Maine. Now I will warn you ... if you put sliced cheese in a bag and vacuum it yeah it turns back into a block lol did that the first time so I use a container for that. I do not know about Sous-vide except for top chef so can't help you there.

    We vacuum seal anywhere from 50 to 200 packages 3 to 5 times a year depending on tags drawn/filled. After burning out my 3rd food saver style machine, I bought the predecessor of the chamber machine in the following link. That was 6 years ago, if it fails tomorrow, I'll go buy another without hesitating. It might be overkill for your purposes ...
