trying to find a set of wheels that would fit 285/70/17 tires and not have to do any trimming. I Have a 3 inch lift on my truck. What do I need to look for as far as offset and back spacing? Thanks for any help

I'm trying to find wheels now as well. The ICON website says 5" backspace.iconWheelInfo.jpg

You're going to rub. Even with the perfect wheel 285's rub. To minimize the potential of rubbing you're going to need new UCA's. And even then you're still going to have to break out a cutting tool.

Have seen some people mention 275s, would those fit? Ultimately want a larger tire without the trimming. Currently have 265s on

If you don't want trimming, then 265/70r17 is the largest you can go. Any bigger and you'll rub SOMEWHERE once the suspension compresses i.e. going over a bump. The key is to pick an aggressive tire, and then that 1" difference won't really matter.
