Your house sounds like mine. I have my flag and shadow box on one wall in the living room, that is the extend of my "I love me" wall. Have a pretty decent whitetail shoulder mount and lots of decent racks in a seabag some place. When the wife left brought the deer up into the living room. Found out pretty quick that most females are not fond of dead animals on the wall LOL. It is back down in the reloading room.

For some reason used to always want a double shovel caribou. I can live without it now. Not so sure I would get so excited about shooting a huge trophy moose anymore either. Little bit of desire there but not thrilled with the thought of getting it out of the woods. I'm liking this catch and release thing with the camera. Birds are fair game as long as the dog is involved. If they weren't not so sure I'd even do that anymore.

Yep, we're on the same train of thought here. Interestingly enough, my wife wants me to hold out for a nice caribou bull next year...she wants a european (antler only) caribou mount done for the stairwell in the house. :notsure: Funny how we change over time. Then again, she brought up something about not to shoot too old a bull the other day, 'cuz she didn't want tough meat ... Hmmm, working on 33 yrs with her...she can still befuddle the bejesus outta me. :der:

Speaking of tough meat, Woundedyak posted this earlier today in the smoking food thread.

Best Buy has the Anova Sous Vide bluetooth cooker on sale for $100. Sous Vide uses warm circulating water to cook meat in vacuum bags. It is supposed to be by far the best way to cook protiens, and pretty much anything else. But really excels with meat. Can even make a brisket tender if you let it go long enough. These type cookers were 4 figures when I first started looking at them. At $100 I'm in.

Should make the oldest bovine you shoot taste like bambi. Or bambi's baby, or so they say. Will know soon.

I can't believe how many on here picked the right woman out of the gate, or even eventually. I am both pleased for everyone that did and impressed by that. I always back the wrong horse :frusty:

I will bite.. :} You have to sear the meat before putting it in there ? I use an Insta Pot pressure cooker and it can do amazing stuff with tough meat but I do have to sear it before putting it in there..

He doesn't have a cdl nor does he goes through the scales, but I don't know what laws cover that. He doesn't fit the description for "commercial" because he's not engaging in interstate commerce, but I don't know what other snags there are to go with weights and axles and all that.

That wasn't me. I'm on #3, but we'll be married 25 years this year so I may have found a keeper...or live in deep fear. Not sure yet.

Amazon site has a lot better description. And you can learn a lot from the reviews. There are more than 1,400 reviews on it. Seeing how you already have most of your meat in a vaccum sealed bag your half way there . I ended up with the Weston pro 1100. Mainly because a number of those that did reviews on chamber sealers also had one for portability.

For Sous Vide you do a reverse sear, you sear after bringing the meat up to temp. Opposite of how I do it on the grill. Most sear in a cast iron pan but I'm not giving up on charcoal LOL. I'll sear the hell out of it with flames once it is cooked. Along the lines of this
    [IMG]

Here is a random video on it. Although Poly Science did kind of start the whole ball rolling.

I forgot watching the video remembered that a number of people use a torch to sear at the end. Think I'll stick with the charcoal though.
