    So the goose has to smoke until it reaches a temp of about 145. I'm going to try and keep the smoker at 160deg, which is going to be tough. However it's -12 out right now, so I stand a chance of having a nice long, cool smoke. Hoping for 3-4 hours on smoke...

    Got up this morning and it felt like a tri-tip kinda day. Just put in on. SPOG and smoke mode for about 2 hours with hickory in the hopper and cherry in the tube. That should get me to around 4:30pm, then I'll turn up the heat to 300+ until IT gets to 120f. Pull it then sear in the cast iron pan. Yum.

    Smoked raw in the shell. Never heard of it before until I saw someone doing it on here a while back. Sounded delicious, we shall see!
