    Well? It is one of those good eats that gets better over time. Also, the funkier it smells the better.

    Buckboard bacon in the skillet last night. This shoulder had a lot of fat in it, which is good if you're making buckboard. Still much more lean than belly bacon.

    This went into PB/Banana/Bacon sandwiches.

    Late b'fast here in HSV, but ya gotta love Traeger Bacon n Sausage. :thumbsup:

    It was my brother in Portland, who turned me on to cooking bacon that way. After, I finally convinced him to buy his own Traeger... :D

    I just tried some side pork on the traeger. I haven't had that since I was a kid and my dad would make it. Was not as good a bacon.

    Beans on to get a little smoke. foil off the shoulder to get a little crust back on the outside. Not my standard operating procedure with the shoulder; trying something a little different.

    I always unfoil at the end for a 1/2 to 45min. Really helps firming up that bark

    So I ended up smoking it for 3 hours, finished in the oven then seared in the pan. I cut it thin and it was fantastic. More juicy than any other cut I've done. My GF said it was like prime rib. Gotta say probably the best tri-tip yet. Leftovers for dinner!

    I am like 0 and 20 on smoked wings. Figured I'd use some pellets in my MES, which quickly caught fire. I pulled 3 dozen wings, literally washed the creosote off them and soldiered on. A couple hours smoke, 30 mins in a 350 oven and a 30 second deep fry later and my wings are...passable.

    I'm about ready to call it and retire my wing game. I can nail pulled pork, brisket, even pastrami and homemade bacon...wings just don't work for me.
