Oh, and grilling. I cook everything on the grill. Steaks, chops, pulled pork, ribs, whole chicken, chicken quarters (boneless thighs marinated in sweet tea are out of this world), whole turkeys, salmon sides, catfish, trout, veggies, corn-on-the-cob, you name it. Over charcoal, gas is awful. Direct heat, indirect heat, offset firebox for some stuff. The only two things I've never done that I'd like to try one day are roasting a whole hog, and cold smoking my own bacon.

 

I'm ready to compete!

I can cook a turkey like nobodies business. Do it every year for Thanksgiving. Chicken thighs and breasts are a different animal. Too small and it can be over cooked way too easily if you are trying not to over cook it.

Practice makes perfect. Buy a good meat thermometer, pay attention, realize that not everything is going to be done at the same time depending on how thick everything is, and don't sweat it. I've been cooking chicken for years, never had any troubles. My wife doesn't eat red meat, so if I didn't grill chicken I wouldn't be grilling.
