    I'm not 100% sure, but I think there are coals under as well as over. I believe it's similar to traditional camp/dutch oven cooking where you have about twice as many coals on top as you have underneath.

    Are those tri-tips on the lower right? I'm dying to try that, but the nearest place that sells 'em is $10/lb (a bit beyond my usual budget).

    In my home state of California, usually $6.99/lb. $7.99/lb for prime!

    On a good day, you'd find cryovacs at Costco for $4.99/lb untrimmed.

    On briskets these days, I use 2 parts kosher salt to one part coarse ground pepper. For flats, I add in a tablespoon or two of granulated garlic; for points, I inject whole garlic cloves. When the garlic and fat in the point both break down and mix together...it's like heaven.

    The best ribs i've made, have been 2 hours unwrapped, 2 hours wrapped, with juice or some sort of liquid poured in the wrap, then 1 hour unwrapped and basting it with sauce. Comes out amazing.

    You put the coals on top. And it'll cook fairly quickly. About 4-6 hours depending on size.

    I saw a good tip on a show, they cooked the rib with the membrane on the back on to reduce the fat lost in cooking, then when the ribs were done they took off the membrane then lightly powdered with their rub mix. coated with bbq sauce and served.

    I miss HEB...The one in Abilene had a tortilla machine going most of the time...had fresh tortillas daily!

    That sounds awesome. One year I did a roast beef where I cut slits all over then stuff that with garlic cloves. I then rubbed it down in salt (sea salt) and pepper and then roasted it in the over. Was probably one of the top roast's I've ever had. Got this nice mellow garlicky flavor throughout every bite.

    We like HEB....at least where we're at now. Better selection than Kroger.

    Funny, when we moved back up to MI we were in a local chain grocery store and we walked into the isle thats for ethnic foods (can't remember what we needed) walking down the isle and my wife starts laughing and takes out her phone to take a picture of the SOUTHERN FOODS section in the isle. Can't remember what all they had in it but wasn't really all that southern lol. Being born and raised in FL/GA she found it amusing that southern stuff was ethnic. :)
