Maybe compared to quantity, but I don't recall.

It costs me about $7 for the gallon of milk, which is a couple bucks more than pre-made mozzarella costs.

I splurge on the milk. Normal UHP milk is $3.29-$4.99 $5.99 for organic.

The milk I use is not UHP and is as close to "natural" as I can get it conveniently. Pasteurized, with the cream. You have to spoon the cream off the top to get the milk.

Brand is called Straus. It's local to me. Comes in a glass bottle (like old time milk) and part of the price is the surcharge for the bottle/bottle deposit.

Ya that was the problem I had when I thought about it the costs far outweighed. There was a little italian market not far from where I used to live that made their own and I would go in there and get that.

Now if I could really make it I would LOVE some buffalo mozzarella, that's some good stuff right there.

Ya not something I have really thought about trying to do there lol. Have milked a cow a couple of times and that's about the extent of that.

Some cheeses are really easy to make and the initial buy in isn't bad for something like mozzarella/farmers cheese.

Rennet and citric acid are pretty widely available these days, and whatever kitchen equipment can probably be found online for $10-20.

I really want to get more into baking, but the interest in cheese stems from the same common urge - be able to make good quality fresh stuff in small batches, and spare me of the unnecessary ingredients from the same products at the store.

I'm not sure buffalo milk mozzarella isn't a blended product with a small amount of buffalo milk and the bulk of it being from cows.

Not something I've looked into, but it is good stuff when I've had it.

Exactly....basically how I feel about store bought jams/jellies...home made stuff is so much better tasting and not chocked full of stuff you cant pronounce much less know what it is.

It's really good but very expensive if you find it. It's usually more mellow and very creamy tasting. I used to get it when I would do my home made margarita pizzas.

Baking is pretty good, I always tell people don't get stuck on the recipe, learn what the ingredients do, how they affect the flavor profile and so on and then vary things to your liking. To be honest some of the great things I've made and also eaten from others where the outcome of screwing up a recipe.

I would like to try the cheese making thing at some point if for nothing else but to say I did it.

Try a simple farmers cheese. All you need is milk, vinegar, seasonings of your choice, and cheese cloth.

Probably half an hour to make.

Same thing with ice cream for me, we used to make it as much as possible from scratch. My wife thinks I'm crazy when we go into a store and I start reading the ingredients on the ice cream container and say we aren't buying this. I can't can't pronounce 50% of the stuff in here. First time I made home made for her though she knew I was right (not saying I'm not crazy just that I was right in this instance).

My latest thing has been home made vanilla also, now I don't brew the liquor I use for it but I buy very high end stuff. I made a few batches for family this past year and now they all want more and won't touch the stuff from the store any longer.
