    I did forget to mention 2 minor, but important steps.
    1: Make sure you rinse the turkey when you remove it from the brine. If not, the skin will be too salty.
    2: Also, right before it's ready to pull off the smoker, tilt the turkey to empty the cavity. There will be lots of juice in there and it's unsightly.
