    It's been a while but they are very lean and usually pretty tasty. My gramps used to do a stew with them.

    Ive tried some beef ribs but cant really find a place that sells "dinosaur" beef ribs.
    I was able to get some beef short ribs last time but still not the same

    I would eat this all day everyday (picture from the web, not mine) I wish

    Some Al Pastor getting a nice oak misting. I dont have a trombo so this should work. Should be done in about an hour.

    Pork loin butterflied and stuffed with pineapple. Achiote, pasilla, and guajillo chili marinade. I used a modified version of serious eats al pastor recipe. Smoked at 225 over oak.

    Turned out alright. I think next time Ill rub the inside with the marinade also.

    Stuffed loin is full of win. It's easy to dry it out with the pasilla, but the stuff gives it a nice nutty flavor. Definitely rub the hell out of the inside and let it sit for a 1/2hr or so before stuffing it. My favorite is just fresh spinich with some blu cheese. Well done

    They had some fish grilled with achiote paste, tomato's, bell peppers, onions, and S&P the other night on Diners Drivins and Dives...It looked good but have to order the Achiote paste online since I highly doubt they have that around here.

    It easier to find the powder than the paste at least here in SD. Sometimes stores carry it in the mexican food section next to the dried chilis. Just put some oil in a pan and heat it up a bit and then put in the powder. Makes a good paste and its easier to incorporate your other spices at the same time.
