    KFC Extra Tasty Crispy Chicken

    1 whole frying chicken, cut up
    6 to 8 cups vegetable shortening

    Marinade
    4 cups water
    1 tablespoon salt
    1/2 teaspoon MSG

    Coating
    1 egg, beaten
    1 cup milk
    2 cups all-purpose flour
    2 1/2 teaspoons salt
    3/4 teaspoon pepper
    3/4 teaspoon MSG

    1. Trim any excess skin and fat from the chicken pieces. Preheat the shortening in a deep fryer to 350 degrees.
    2. Combine the water, salt, and 1/2 teaspoon MSG for the marinade in a large bowl. Add the chicken to the bowl and let it sit for 20 minutes. Turn the chicken a couple times as it marinates.
    3. Combine the beaten egg and milk in a medium bowl. In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper, and 3/4 teaspoon MSG).
    4. When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off. Working with one piece at a time, first coat the chicken with the dry flour mixture, then the egg and milk mixture, and then back into the flour. Be sure that each piece is coated very generously. Stack the chicken on a plate or cookie sheet until each piece has been coated.
    5. Drop the chicken, one piece at a time, into the hot shortening. Fry half of the chicken at a time (4 pieces) for 12 to 15 minutes, or until it is golden brown. You should be sure to stir the chicken around halfway through the cooking time so that each piece cooks evenly.
    6. Remove the chicken to a rack or towels to drain for about 5 minutes before eating.

    Chili's Southwestern Eggrolls

    1 chicken breast fillet
    1 tablespoon vegetable oil
    2 tablespoons minced red bell pepper
    2 tablespoons minced green onion
    1/3 cup frozen corn
    1/4 cup canned black beans, rinsed and drained
    2 tablespoons frozen spinach, thawed and drained
    2 tablespoons diced, canned jalapeno peppers
    1/2 tablespoon minced fresh parsley
    1/2 teaspoon cumin
    1/2 teaspoon chili powder
    1/4 teaspoon salt
    dash cayenne pepper
    3/4 cup shredded Monterey Jack cheese
    five 7-inch flour tortillas
    Avocado-ranch dipping sauce
    1/4 cup smashed, fresh avocado (about half of an avocado)
    1/4 cup mayonnaise
    1/4 cup sour cream
    1 tablespoon buttermilk
    1 1/2 teaspoons white vinegar
    1/8 teaspoon salt
    1/8 teaspoon dried parsley
    1/8 teaspoon onion powder
    dash dried dill weed
    dash garlic powder
    dash pepper
    Garnish
    2 tablespoons chopped tomato
    1 tablespoon chopped onion
    1. Preheat barbecue grill to high heat.
    2. Rub the chicken breast with some vegetable oil then grill it on the barbecue for 4 to 5 minutes per side or until done. Lightly salt and pepper each side of the chicken while it cooks. Set chicken aside until it cools down enough to handle.
    3. Preheat 1 tablespoon of vegetable oil in a medium-size skillet over medium-high heat.
    4. Add the red pepper and onion to the pan and sauté for a couple minutes until tender.
    5. Dice the cooked chicken into small cubes and add it to the pan. Add the corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt, and cayenne pepper to the pan. Cook for another 4 minutes. Stir well so that the spinach separates and is incorporated into the mixture.
    6. Remove the pan from the heat and add the cheese. Stir until the cheese is melted.
    7. Wrap the tortillas in a moist cloth and microwave on high temperature for 1 1/2 minutes or until hot.
    8. Spoon approximately one-fifth of the mixture into the center of a tortilla. Fold in the ends and then roll the tortilla over the mixture. Roll the tortilla very tight, then pierce with a toothpick to hold together. Repeat with the remaining ingredients until you have five eggrolls. Arrange the eggrolls on a plate, cover the plate with plastic wrap and freeze for at least 4 hours. Overnight is best.
    9. While the eggrolls freeze prepare the avocado-ranch dipping sauce by combining all of the ingredients in a small bowl.
    10. Preheat 4-6 cups of oil to 375 degrees.
    11. Deep fry the eggrolls in the hot oil for 12-15 minutes and remove to paper towels or a rack to drain for about 2 minutes.
    12. Slice each eggroll diagonally lengthwise and arrange on a plate around a small bowl of the dipping sauce. Garnish the dipping sauce with the chopped tomato and onion.
    Chili's Southwestern Vegetable Soup
    6 cups chicken broth (Swanson is best)
    1 14.5-ounce can diced tomatoes, with juice
    1 cup water
    1 cup canned dark red kidney beans, with liquid
    1 cup frozen yellow cut corn
    1 cup frozen cut green beans
    1 4-ounce can diced green chilies
    1/2 cup diced Spanish onion
    1/2 cup tomato sauce
    6 corn tortillas, minced
    1 1/2 teaspoons chili powder
    dash garlic powder
    Garnish
    1 cup grated cheddar/jack cheese blend
    1 cup crumbled corn tortilla chips
    1. Combine all the soup ingredients in a large saucepan or soup pot over high heat. Be sure to mince the corn tortillas into small pieces with a sharp knife before adding them to the soup.
    2. Bring soup to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the soup has thickened and tortilla pieces have mostly dissolved.
    3. To serve soup ladle 1 1/2 cups into a bowl. Sprinkle a heaping tablespoon of the grated cheddar/jack cheese blend over the top of the soup, and then a heaping tablespoon of crumbled corn tortilla chips over the cheese.


    Tony Roma's Baked Potato Soup

    2 medium potatoes (about 2 cups chopped)
    3 tablespoons butter
    1 cup diced white onion
    2 tablespoons flour
    4 cups chicken stock
    2 cups water
    1/4 cup cornstarch
    1 1/2 cups instant mashed potatoes
    1 teaspoon salt
    3/4 teaspoon pepper
    1/2 teaspoon basil
    1/8 teaspoon thyme
    1 cup half and half

    Garnish
    1/2 cup shredded cheddar cheese
    1/4 cup crumbled cooked bacon
    2 green onions, chopped (green part only)

    1. Preheat oven to 400 degrees and bake the potatoes or 1 hour or until done. When potatoes have cooked remove them from the oven to cool.
    2. As potatoes cool prepare soup by melting butter in a large saucepan, and sauté onion until light brown. Add the flour to the onions and stir to make a roux.
    3. Add stock, water, cornstarch, mashed potatoes, and spices to the pot and bring to a boil. Reduce heat and simmer for 5 minutes.
    4. Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Chop baked potato with a large knife to make chunks that are about 1/2-inch in size.
    5. Add chopped baked potato and half-and-half to the saucepan, bring soup back to a boil, then reduce heat and simmer the soup for another 15 minutes or until it is thick.
    6. Spoon about 1 1/2 cups of soup into a bowl and top with about a tablespoon of shredded cheddar cheese, a half tablespoon of crumbled bacon and a teaspoon or so of chopped green onion. Repeat for remaining servings.


    Original Tommy's World Famous Hamburgers

    Chili
    1 pound ground beef (not lean)
    1/4 cup flour plus 1 1/4 cups flour
    1 1/3 cups beef broth
    4 cups water
    3 tablespoons chili powder
    2 tablespoons grated (and then chopped) carrot
    1 tablespoon white vinegar
    2 teaspoons dried minced onion
    2 teaspoons salt
    1 teaspoon granulated sugar
    1 teaspoon paprika
    1/4 teaspoon garlic powder

    3 pounds ground beef
    8 hamburger buns
    16 slices Kraft cheddar cheese Singles
    1/2 cup diced onion
    32 to 40 hamburger pickles (slices)
    8 slices large beefsteak tomato (1/2-inch thick)
    1/4 cup yellow mustard

    1. Prepare the chili by first browning the meat in a large saucepan over medium heat. Crumble the meat as it browns. When the meat has been entirely cooked (7 to 10 minutes), pour the meat into a strainer over a large cup or saucepan. Let the fat drip out of the meat for about 5 minutes, then return the meat back to the first saucepan. Cover and set aside.
    2. With the fat from the meat, we will now make a roux - a French contribution to thicker sauces and gravies usually made with fat and flour. Heat the drippings in a saucepan over medium heat (you should have drained off around 1/2 cup of the stuff). When the fat is hot, add 1/4 cup flour to the pan and stir well. Reduce heat to medium low, and continue to heat the roux, stirring often, until it is a rich caramel color. This should take 10 to 15 minutes. Add the beef broth to the pan and stir. Remove from heat.
    3. Meanwhile, back at the other pan, add the water to the beef, then whisk in the remaining 1 1/4 cups flour. Add the roux/broth mixture and the other chili ingredients and whisk until blended. Make sure your grated carrot is chopped up to the size of rice before you add it.
    4. Crank the heat up to medium high. Stir often until you see bubbles forming on the surface of the chili. Turn the heat down to medium low, and continue to simmer for 15 to 20 minutes, or until thick. The chili should be calmly bubbling like lava as it simmers. When it's done cooking, take the chili off the heat, cover it, and let it sit for 30 minutes to an hour before using it on the burgers. It should thicken to a tasty brown paste as it sits.
    5. To make your hamburgers, you'll first divide 3 pounds of hamburger into 16 portions of 3 ounces each. Grill the burgers in a hot skillet or on an indoor griddle for 4 to 5 minutes per side or until done. Sprinkle some salt and pepper on each patty.
    6. Build the burgers by lightly toasting the faces of the hamburger buns. Turn them over into a hot skillet or a griddle on medium heat.
    7. Place one patty onto the bottom bun.
    8. Position two slices of cheese on the meat.
    9. Place another beef patty on the cheese.
    10. Spoon about 1/3 cup of chili onto the beef patty.
    11. Sprinkle about 1 tablespoon of diced onion onto the chili.
    12. Arrange 4 to 5 pickle slices on the onion.
    13. Place a thick slice of tomato on next.
    14. Spread mustard over the face of the top bun and top off your hamburger by turning this bun over onto the tomato.

    Roasted tomato soup : rough chop tomatoes I did about 10, seed 2 red peppers and rough chop, rough chop 1 onion. Put all the ingredient on a cookie sheet with olive oil,salt and pepper and chop 8 cloves of garlic add some sprigs of thyme. Bake on 400# for 50 minutes.

    Take it out of the oven. In a stock pot add about 2 or 3 tablespoons of olive oil, 2 heaping tbsp tomato paste in the hot oil and mix. Then add the tomato,onion, and pepper mix, bring to a boil. Add 30 oz or so veggie stock and bring to a boil. Once it gets to a boil take off heat and mix with a submersion blender until smooth. Bring that to a boil for a couple of minutes then take off heat. Serve hot and enjoy.....

    4 eggs
    paprika

    rough chop the ham, slice the gruyere thin, make a mayo and mustard mix. Make an egg batter of the 4 eggs add paprika and cayenne pepper. Slice the challah bread as thick as you like. Make sandwich layer 1 side may,mustard mix, ham and gruyere, slather other slice of bread with the cranberry sauce. Press sandwich together pretty thin. Dunk in egg batter and pan fry until done..... enjoy

    Hey we had the KFC chicken tonight(sorry no pics) my wife noticed that it had MSG in it so we left that out, it came out ok not as flaky as KFC but it did have a hint of KFC flavor. Makes me wonder if the MSG gives that much flavor but i guess we will never know since wife says NO MSG! thanks again for the recipe:thumbsup:

    I can attest to the goodness of this, and add that chicken tenders done this way are awesome, and soooo easy! They are even better leftover and cold.
