    I see lots of DIY smokers have the diamond steel grate for their base, Ive been thinking of replacing my grill/smoker grate with that. Any ill effects of doing this?

    yeah basically just cut to fit...My original grates seem to rust apart after a couple years...

    I see a lot of places on Food network shows and they show the expanded metal grate for smoking meats numerous places and it doesnt look like they even clean them off.

    yeah Ive seen a few episodes. Im not sure if it was the same show but Aaron Sanchez was on one with that guy and they got the spicy challenge. Both of them got lit up. I was just laughing :)

    No worries tips are always appreciated. It peeled because I started to cut the fat off during prep, then decided not to. That pic wasn't of it done yet either. I also didn't use any rub, the flavor was good. I'll have another 1 or 2 to do before May 3rd lol it was a hit at our last offroad trip.
