    do the bend test. temp probes in ribs aren't very accurate. i dont really like my ribs falling off the bones. the meat should pull away cleanly but should still hold together when you pick up one end of the rack of ribs.

    That's about how these came out. There was still a little meat at the end of the bone, but still juicy and tender. Better than my last rack by a good stretch.

    My good buddy is coming into town later this week so I'm going to smoke a brisket late Friday afternoon until the AM for brisket BBQ breakfast. Figure I will put something else on on Friday afternoon for snacks that night. Going to do a fatty stuffed with cheddar, onions, and peppers. ABTs and scotch eggs. Can't wait!

    Honestly I can start reading this thread right after I just ate and all the sudden be like NOW I'M HUNGRY and need to make that and that and ohhhhh that sounds good too.

    So get to cracking on those meats and show us some pics of them. :rofl:

    I had some plans to smoke this weekend but my friend has talked us into going to Texas De Brazil, but I MIGHT still do a fatty or two one of the days.

    Cant start until this weekend when I get my fridge :(

    Where do you guys buy your meat from? My wife loves moist brisket and I think thats what I wanna cook first in the new grill for her :D

    Honestly it seems to really vary by the type of meat and who has it on sale. A lot here like Walmart for brisket (good price), I end up with a lot from Sam's Club also. Kroger (if you have them) had a really good sale on butt's not to long ago. I watch the local stores and also watch on here for when sales are mentioned. Local butcher has also had some decent deals lately and it's close to where my friend works so he has been grabbing stuff for us.

    I miss Krogers :( They dont have them here in San Antonio.

    I'll have to look around for the best deals. I know there is a meat market down the street from my house but scares me a little.

    HEB sells good brisket. I just got some prime for 2.99 a lb this past weekend.
    Costco sells them too for about the same price.

    if you want really good top end, HEB has angus brisket at about $5 a lb and kobe brisket (special order) $6.99 a lb

    Was tending the smoker yesterday watching a guy on a paddle board get near the boat dock. As he got closer I could tell he was smelling the yummy the way his nose went up sniffing around. I had some real nice smoke going at that time.

    Pork loin is too lean of a cut to cook like a butt. You can still smoke it, but at higher temp and pull around 140 to keep it juicy, rest tented 10-15 min or so.
