    The weekend (or the house I'm flipping) conspired to trash my smoking on Saturday. I didn't get to do my fatty, I have decided I will do them this week since we are going camping this weekend. That way we will have some yummy goodness to take with us. However friend did do a 5.5lb cheese stuffed, bacon wrapped smoked meatloaf for Saturday (him and I share smoking duties). I think I have him interested in us building a double walled smoker for his outdoor kitchen we are building this summer.

    Jess is awesome. If you haven't tried her Hardcore Carnivore rubs yet I highly recommend going out and getting both, the black especially. It's unreal what it will do for your red meats. I've gone through a few bottles already.

    I'm still in the process of buying a grill and I'm set on the one at Lowes which is the Char-griller. Its a barrel type with a smoke stack out the top. I friend of mine has the same one and we were talking the other day and I asked him how he put his vents. He said the intake by the coals he leaves wide open and the stack vent he almost always leaves closed. I guess it all depends on what you are cooking but is this the correct way of using a charcoal grill?
