    My first real pig bbq was in Oahu back in the 70's. Spent 6 months on the rock and a shipmate from LA sister had married a local. They lived in an old school bus in a quarry on the edge of the jungle and sugar cane plantation. His job was to protect the quarry and cane fields from the wild boar. He had a single shot 20 ga. and slugs took a few tries but I killed a huge boar one evening as it came out of the jungle into the cane field. On the second shot as it was charging me had no idea I could operate a H&R single shot that fast and reload it. Everyone turned out to clean it, they built a fire on the beach and dug a pit. They put some of the coals into the pit, the women stuffed it full of local herbs and seasonings and stitched it up. Rolled it into the pit and put more coals on top, then sand on top of that. From what I recall it was the best pork I ever ate in my life! Makes a NC pig pull pale in comparison. But like I said those local herbs... :D

    Splatchcock chicken for a lady friend tonight. Only let the kosher salt sit for 45 minutes and turned out well. Didn't over do it about the same as on a steak. Which I normally do but let it sit an hour or more. After half an hour it dried back out on the grill and I always use a clean dish rag to wipe the crystals that form again off. Guess don't have to wait an hour with chicken, with 1.5" or thicker steak it seems to be mandatory.

    Took 2 hours kept it low and slow but because of my guests preference ended up with his and hers chicken. Silly girl. At least she isn't a vegan though.

    Ate the dark meat and put the breast and remainder back on the grill. She realized the error of her ways and even if she didn't the left over got coated in a thick layer of Sweet Baby Ray's sweet and spicy. But seeing how she ate most of what was supposed to be mine don't think there will be any complaints.

    Yea those wild pig can do some damage .Cooking in the pit with the hot rocks is what we call kalua pig .Adding banana leafs add some smoke flavor. They usually throw some hot rocks in the stomach also to cook inside and out.
    Your cook looks good. Chicken threw me off a bit .Was like what happened lol.

    The yellow sauce is melted butter with seasoning mixed in. My thought is it will solidify again in the fridge & slowly melt in the smoker. Don't know if that will work or if it's even a good idea. Haha

    They should be good if I don't screw em up. Lol

    I've had crabs, fish, shrimp & bay scallops from local waters all caught myself but never lobsters. I believe they're in the keys & the season is only like 2 days or something.
