were they "well done" or what? I still prefer a proper medium rare. but its ok if its well done, just has to be juicy!

Nope they were all medium. Smoker portion of it is really low temp doesn't cook them just add's a nice overall smokey flavor to the meat. Then you do the actual cooking part at the higher heat. Could have had them anywhere from rare to well done. I don't do well done on steaks, not a fan of it lol.

I dont care for them being well done either. Sometimes when visiting friends they like theirs well done. So unless they ask I just shut my mouth and eat;)

lol I hear ya. MY F-I-L/M-I-L likes theirs that way. My wife has told me she didn't really like steak until I introduced her to Medium, now she loves it. When we have steak at their house now they usually end up asking me to cook it, they say even well done mine come out better lol. Doesn't bother me then the rest of us get ours done the way we like them.

That bread is so freaking addictive. We found some of the larger ones for sammiches at the store one day. Those things went FAST in my house lol. We normally buy the 2 pack at Sam's Club my daughter takes some for either breakfast or lunch a lot of days.

This is what I serve my pulled pork on, topped with a bbq mustard sauce. They're always a big hit.

Tried the Jalapeno Kings a couple weeks back... yummmmm. I still prefer the originals, but they have some good ones. We try not to buy them because we have to buy twice as much. Always snack on them while cooking. Pretty sure there's crack in them to keep you coming back

What's the advantage of removing the flavor sticks?

Debone isn't bad. I did a turduchen a few years back and did all three birds. Tedious but not bad. And the end result was Soooo worth it.

They are just regular king rolls that I toasted on the cast iron with garlic butter. I typed an extra king in there by mistake

Dont know .Reason I want to try is because I like turkey with gravy better than steak and prime rib  and when deboned lay out flat spread stuffing than roll up and tie together. Like try some thing different.

Sorta lol firebox is on the right side and I used a piece of stovepipe under the grill to dump smoke on the left side. Some day I'll weld a piece of plate to make a true reverse flow but the stovepipe works fine I guess :)
