    Suggestions for smoking a rack of St. Louis ribs?

    I'm thinking trim the excess meat off, pull the membrane off the back, then some kinda bbq rub across the top (suggestions here would be awesome)

    3 hours smoked, 2 hours wrapped in tin foil w/ apple juice, then 1 more hour unwrapped to finish them off (bbq sauce? finishing sauce? something here??)

    thoughts?
