    Long story short I got a bunch of branches and stuff from a rosemary bush my neighbor dug up a couple weeks ago. I let it dry and threw a twig about the size of my finger onto the hot coals while doing a reverse sear on some ribeyes. It was awesome, definitely a hint of added flavor above the salt and pepper on the steaks. Sorry, no pics, but I'm gonna do it again for sure. Just a kiss of smoke I guess :thumbsup:

    A few pounds of fresh ground chuck straight from the butcher table. The usual herbs and spices kneaded up in the chuck (I can nail it down if you like; long list). Put the chuck in cheese cake tins about half full and poke some holes 3/4 through. Add bourbon and a little more spice, then let rest for a bit. We used about 2.5 shots of bourbon for all five patties. Smoke low and slow 1.5 hours with 3 small-ish hickory chunks, a shot or two of bourbon for the cook, maybe a beer, too, then finish with a small handful of apple sticks the last half hour.

    They are close to medium well when done, but super tasty. I would like to do them for 1 hour for more medium or even medium rare finish, but my wife likes her meat well, so.... compromise.

    I am doing another round of chuck burgers tomorrow, along with a small brisket flat and baby backs. Should be a full day of smoking. And maybe a little more bourbon. :wink:

    Tomorrow is steak, lot of leftovers for surf and turf. Also adding lobster and crab stuffed portabella's.

    cant go wrong there! My wife makes some good kababs with pineapple, bell pepper and mushrooms, but bacon works too !! :)
