Eh mostly it's personal preference as to how done you like it. Looks really good, me personally I like it where you can still see the whip marks from the jockey that rode it.

Gordon Ramsay provided me my new go-to for describing how I like my steaks:

Medium-rare, though, if I'm honest. I had true rare while in Spain once and that was interesting to say the least.

Thank flank looks awesome, by the way @WBF610.

Busy couple days on the Traegers this weekend.

Wings 3 ways and TriTip Saturday at work on the Timberline.

Rack of Ribs Sunday night on my Pro22. Turned out a little dry since I had probably had a few too many before throwing them on and they sat for an hour longer than I would have liked. :drunk:

Did some candied bacon this afternoon and a London broil with a side of cheesy asparagus and a couple turkey burgers for the lady for dinner,

I need to start taking more pictures when I fire them up :anonymous:

Too poor to list anything interesting.
It keeps some of the heat in and let's it breathe vs trapping the heat and moisture. I use now when I'm letting my meat rest and it's nice. Haven't used it during smoking, but people have.

he said 321 made his ribs too mushy. i recommended only foiling for an hour. i personally don't foil at all.
