yea the woman got it on sale and got some rebate on top of it. it basically does the same thing that the cheap electric smoke box with no glass on it does. the glass is neat, but its a bear to keep clean. if I could do it again I wouldn't get the glass. I think she got it for about the same price of the one youre looking at. either way feel free to use her! it can fit two big butts in there :anonymous:.

I set the electric up and then do something quicker like ribs on the wood smoker so I have something to nibble on. usually have a fire going too. oh and plenty of beer for breakfast. a wise man once told me, " you cant drink all day if you don't start in the morning"

Careful, you realize his version of sous vide includes a box of ziplock bags, dropping the meat in that bag, dropping the bag down his pants, then going and doing a few hours of yard work.:eek:

Make it a hybrid, on the smoker at super low temp, to get the flavor, then in the sous vide to cook most of the way then onto the hot grill to impart the nice bark on it. This way you spend MORE time and drink MORE beer.

    Pork loin was about it.

Had a friend recently do a sous vide brisket for 72 hours. It was amazing, but not really any bark or smoke flavor on the outside.

 72 hours?! at what point does the slow temp rising thing start to create a culture for bacteria growth in that?

He said he got it to 220 and then dropped it down and held at a lower temp. I ate about a lb of it and didn't get the shits.

ok so he didn't start out at chilled temps then take 72 hours to get the internal temp up to safe levels. that makes me feel better. not that I wouldn't have eaten it either way haha.

No pain no gain. Come on most of us or have eaten at Taco Bell and we ALL know that's going to cause the same intestinal distress. :crapstorm:

I've probably been under a rock for not having heard that before, but that quote is amazing.
