If it really is buy once cry once, you can go ceramic. I built my own table with cedar and a kreg tool for my BGE to help with cost. I have BGE but I hear good things about Primo too.

Too poor to list anything interesting.
It's all about how much you can cook on it at once. That way you're set on food for the month :D

Everything Cold Iron said. Vac sealer will be handier than you know, especially if cooking for one. Keeping and reheating leftovers is dramatically improved if you use a vac sealer. I have the 18, no regrets at all and think it's the perfect size. I too cook for one or two at most, just me and the girlfriend. Never had any need or want for 22, no reason to waste the fuel. But, if you want to cook for partys and such, the 22 would be wise. Just know it will use more fuel.

I considered the BGE too...does it really do all it says it can? I grill like nobody's business but am just now wanting to get into smoking meat. Hard to beat a NuWave for roasting or an InstaPot for all the other stuff.

Best bang for buck by far for grilling and smoking... a Weber 22 and a WSM 18. Best combo unit if price doesn't matter? Primo XL.

I love mine... it can do just about anything and holds temp awesome, I rarely have to mess with vents once temp is locked in. smokes at low temps really well, grill, roast, whatever. Sear steaks and cook pizza at 750 a lot (need to work on my dough though), basically no maintenance other than emptying ash and replacing gasket if it goes... I have had mine for 4 years now and had no issues but some people have lost gaskets on high heat cooks.

I still have a weber genesis that i use for really quick stuff or if i am in a hurry, but even burgers i will just throw some lump in a chimney starter and the egg is ready to go in 15-20 min or so. BGE is local to Atlanta so everybody around here with ceramic has them. I have one buddy with a primo and he likes it, but i couldn't tell you the differences other than shape.

    Awwwww yeeeaaaahhhh!!!!!

We've built and sold a handful of them and I have a deposit on one to build in the fall (the guy is understanding that lead times are long right now since I'm working on my MBA). They are between $375 and $550 depending on options. I think most of the details are on the site, but I'm happy to answer any questions. That's been much more of a hobby-like venture than the cooking and the rub, but I'm always happy to discuss them!
