    Yeah...if I go Amazon, I won't get it until late Monday. Lowes/HD I can go get it today for the same price. They only have the 18" though...which is ok I guess.

    Given your described situation, I really think you'll be happiest with the 18. Just make sure you season it a couple times first. Do a hot run with all vents open, one full lit chimney, then do a test smoke run with some fatty cheap crap like bacon ends or something. The goal is to burn off the factory funk with the hot run, and then get a layer of goodness coating the inside with the test smoke run.

    Great looking wings set-up! Do you find that you have to rotate levels throughout the cook for all around even cooking? Or does the diffuser distribute the heat well enough to just leave them as is?

    I'm not @Chrisf06 , but I would think once that lid is closed it's all even in there, no need to move anything around.

    Hoping to get the next batch whipped up soon, then get the rest of the current list fulfilled. We tried to get out ahead of schedule early because there is a potential conflict in the schedules for this weekend. We should still be ahead of schedule for the next round of shipments, which were originally scheduled for June 26th (20 lbs a week), but if there is about a week or so between the last 20 pounds that went out and the next, that's why.

    Thank you all for the support and glad to see the list continuing to grow!

    No, the platesetter/diffuser is big enough to block direct heat on the whole thing, and when closed, heat circulates around. I just flip about halfway through, which can be a pain with that many wings on 3 levels.

    Basically this. One thing is that the bottom rack gets all the drippage from two levels, so can drip some of the rub off the bottom ones. Really only matters if you are doing just a dry rub to finish. Recently I have been pulling them when they are done, throwing in a huge bag of franks buffalo, and throwing them back on direct heat for 1-2 minutes to crisp up sauce on the outside... taste is killer that way.

    Thanks a bunch for that! It means a lot, honestly.

    Our next competition is the Bedford Blues & BBQ Festival in Bedford, TX. It is the only event we've competed in, but this will be our 4th year doing so. It has some SERIOUS competition in the pro event. There are numerous teams that have been featured on BBQ Pitmasters, teams sponsored by Myron Mixon, Jambo, etc. It is tough for us backyard cooks to place high, but we love rubbing shoulders with those teams.

    As for those shows, that's one thing we aspire to do. Once we get a little comfortable, we can be pretty entertaining. We get a lot of interaction with folks at our campsite during competition. Maybe, and this is thinking long term, I could put together an audition video and use the folks on this site to help demonstrate the enthusiasm and possibly get everyone to jump in for support. Who knows. Once I know we've satisfied everyone on the group buy list, I'll start looking to the next step.

    We got a little exposure last year in a radio interview. It is one of the bigger AM talk radio stations in D/FW. Short segment and I was admittedly a little nervous, but I think it went well. You can listen to it below:

    Got a line on a used 18" WSM. Seller is asking $150. Looks to be used only a handful of times. Inside looks pretty clean.

    Good deal. I would still do the trial smoke run, looks TOO clean :) Seriously, the bigger buildup it gets inside really helps stabilize temps. Nature of the beast.

    To @horstuff 's point, the best gasket for all of those seams is a layer of grease :D.
