    Always have to put on "enough" :D It depends IMO. Waiting on my order for the rub too, but didn't put in until recently.

    I like smoked chuck roast and often make them into chuckie burnt ends. Because you can never have enough bark. I do 2 and put a pan of veggies under them. If your doing potatoes you want to par boil them or nuke them for a bit first.

    When they have a couple of hours left I cube them and then put a bunch more rub on them in a foil pan. After about an hour back on the smoker as the additional bark starts to form I then add sauce.

    Normally would have gone another hour or so to caramelize them more but it was getting late. But still taste great. As do the veggies. The veggie pan will be full of liquid fat from the meat above it and you need to drain them. Or not LOL.

    The chuck I put in has been smoking directly on the rack for 3.5 hours now at 225°-250°. Internal temp is ~150° now so will leave it on until about 165°. At that point I was going to foil it until it was pull-apart tender...but damnit if those burnt ends don't look delicious!

    Get a rib rack, you can do 4 baby back racks on top grill alone in a 18" WSM.

    Yup. I've had a couple, some of them shit especially the one from Cabelas. The one I have now is great, got it from local Ace hardware. You want thick heavy steel, not spindly wire looking sections.

    Yeah, I don't know what mine has but I use the shit out of it, nothing is anywhere close to flaking or whatever. Thing's bulletproof.

    Yep. The "ultimate rib rack" from Cabelas is a joke, 30 bucks and a POS.
