I'm surprised you haven't canceled the wedding and come after me.

    They're real, and they're magnificent.

I usually do either a rub on it or just a good dose of salt/pepper. I then run it on the smoker for a while at low temp to get some good smoke flavor on it, depending on the factors it could be on there smoking for 30 to 60 mins, then I bring it up to high temp and finish it off to a nice medium rare to medium, I then wrap it and let it sit 10-15 mins and slice it up. Has come out great every time I've done it this way.

One day there will be a national charcoal shortage, the price will go to $10k a bag for this fuel and then on that day scottalot will be richer than Bill Gates.

Next episode of hoarders @scottalot. When ever he goes to buy charcoal the factory says fire up the second line. I checked all the charcoal inventory in S.C. and it's all sold out within a 100 miles of his house.:boink:

Problem with getting coal or lump in mail is that usually the bags are beat to shit by the time you see them, lots of little chunks and dust, much less usable stuff left in the bag. Usually.

When adding additional charcoal for longer cooks, do you add charcoal straight from the bag on top of the ashed coal? Or do you burn another chimney full and wait for it to turn white, then add it in the grill or smoker box?

Depends how far along you are. If you are doing Minion method and you still have unlit coals, place them there. If you have no unlit coals, always best to prefire the coals before putting them in, even though it's a bitch depending on your pit config. The more natural of a product you use, the less important it is to prefire.

Minion method, meaning unlit coals on one side? Sorry, but newbie here as I only have a couple of cooks on charcoal. I've seen others use charcoal to start with and then use wood to keep the fire going.
