Ha ha...that's pretty good. If we're going for a 7/10, I can't scare people off!

They were purchased at the local nursery, and labeled as jalapeños. That first year, i had people report they were mild, and other day they were the hottest jalapeño they ever had. I was confused as to why and thought some people were just sensitive to heat. I gave my boss a few bags as his didn't do well, and he wanted to make poppers. I told him about the potential variation in heat, he didn't care either way. That next work day I asked him how they were, and he started laughing, said some were so hot that his kids were crying after eating them. I guess one or two plants put out some extremely hot ones that year.

Anyway, I don't eat them, but do enjoy giving them away to those that do.

Talked to my partner in crime tonight about that spicier batch. We have a recipe written down and jarred up in a small amount already that is quite good. Need to try it again to see if it meets that 7/10 on the heat scale that has been requested. We're going to make up a little something this weekend using that recipe and see what we can set up for taste testers.

Oh and fear not, we're getting a big batch of the regular stuff done first!

Used some rub on pork chops and did a quick cook on the weber genesis last night, definitely less heat, closer to 1, than when I did the chicken thighs. I think it is due to losing more rub on a direct grill cook, as opposed to the indirect smoke I did on the thighs, where more rub was retained and crisped into the skin. That may explain some of the varied reports of the heat scale. That and different folks have different tastes.

just different heat tolerances, if you think ketchup is spicy then its about a 4;) as for this rub and my preference I think it will pair nicely with chicken, pork of any kind and corn.

It seems to me the lady at the post office said that shipping prices go down a bit if the weight is under 13 oz. I'll verify. I'd like to find a size that gives a happy medium between the testers getting a good sized sample and shipping not being too expensive. The samples will be just that, samples, so they won't be "sold", so to speak, but we'll be looking to cover some of the costs, too.

    We'll make it work!
